Ingredients

8 large eggs

1 cup milk (whole or 2%)

8 oz cream cheese (softened)

1 tsp salt

1/2 tsp black pepper

1/2 tsp garlic powder

1/2 tsp onion powder

1 cup bell peppers (diced, any color)

1 cup cooked spinach (fresh or frozen, drained and chopped)

1/2 cup onion (diced)

1 cup cherry tomatoes (halved)

Meat (optional:)

1 cup cooked and crumbled breakfast sausage or bacon (optional)

4 cups cubed bread (brioche, sourdough, or white bread)

1 cup shredded cheese (cheddar, mozzarella, or your preference)

Fresh herbs for garnish (optional, such as parsley or chives)


Instructions

Preheat the Oven:

Preheat your oven to 350°F (175°C).

Grease a 9×13-inch baking dish with cooking spray or butter.

In a large mixing bowl, add the softened cream cheese, eggs, milk, salt, pepper, garlic powder, and onion powder. Use a hand mixer or whisk to blend them until smooth and creamy.

In a separate bowl, combine the diced bell peppers, cooked spinach, diced onion, cherry tomatoes, and crumbled sausage or bacon (if using). Mix well.

Fold the vegetable mixture into the egg and cream cheese mixture until well incorporated.

On the bottom of the greased baking dish, layer the cubed bread evenly. Pour the egg mixture over the bread, ensuring an even distribution. Top with the shredded cheese.

Bake in the preheated oven for 40-45 minutes, or until the casserole is golden and set in the center. A toothpick inserted should come out clean.

Let the casserole cool for about 10 minutes before slicing. Serve warm, garnished with fresh herbs if desired.
